Chocolate Mousse

Ever get the call from your family or friends saying they are ‘just around the corner and we’ll pop in? Don’t go to any trouble.’ Then what unfolds is me breaking into a sweat madly rush around the house trying to throw something together…. Usually it’s chocolate and fruit on a plate! 

This simple recipe will save you because it only has 5 ingredients!! And is made within a few minutes. It’s safe to say I don’t know anyone who doesn’t love a smooth and creamy chocolate mousse. This one is the perfect balance. My strongest critics (my children) eat way too much of it. I promise your guests will love it. It really is the best mid week recipe! Oh, and one last thing, DO NOT allow the chocolate to ‘slightly cool’ for too long while you do 27 other jobs!! Not that I’m speaking from experience (insert crickets chirping)… it will start to solidify again. Try adding a few drops of peppermint essence essential oil or your favourite liquor to create the ‘wow’ factor! 


300g good-quality dark Chocolate. Roughly chopped

3 Eggs, at room temperature 

¼ cup of Caster Sugar

1 Tablespoon good- quality Cocoa Powder

300ml Thickened Cream (keep a few cartons in the freezer for emergencies.)


Place the chocolate in a heatproof bowl. In a bain-marie. Allow chocolate to melt and then cool slightly.

Beat eggs and sugar for 5 minutes. You’ll know when it’s ready, the mixture will double in size.

Fold in cocoa and cooled chocolate. 

In a separate bowl beat the cream until thick. Be careful not to over whip. 

Fold into the chocolate.

Place into glasses or bowls. Refrigerate for 1 hour before serving.
